Pale straw in colour, this sparkling wine presents with fresh vibrant apples and melon fruits on the nose. The palate displays similar fruits, a fine mousse and gentle autolytic character providing complexity. This wine has a long lingering dry finish due to its fine acidity.
Gisborne enjoys a maritime climate, the surrounding mountains provide shelter from westerly and northerly weather systems. Deep, fertile alluvial soils are found in the plains while clay loams are predominant closer to the hills. Premium fruit from specific vineyards in Gisborne, were selected for this wine. These sites are managed specifically for sparkling wine production to ensure the perfect balance of flavour and acidity at harvest.
Produced by Villa Maria, crafted from Chardonnay and Pinot Noir, bunches were gently pressed and juice was settled bright before racking and inoculation. Fermentation was controlled at low temperatures in stainless steel tanks to allow the development of fine, pristine flavours and malolactic fermentation was encouraged to build texture and mouthfeel in the base wine. At blending, a portion of back vintage reserve wine was included to add richness and depth. Following an extended period of ageing on lees in tank, secondary fermentation occurred in specially designed pressure tanks to develop the delicate, fine bead and the wine was bottled shortly after.
