Built for demanding production kitchens, the 40-gallon Legion LGB-40 pairs the speed of steam with the control of gas heat and the consistency of a twin-shaft agitator. Its deep-drawn 304 SS kettle, full-body insulation, and precise thermostat (150 – 260 °F) deliver perfectly even results batch after batch—without the need for an external boiler.

Integrated twin-shaft mixer

  • High: 46 RPM main agitator / 120 RPM secondary
• 304 SS anchor-style main agitator hugs kettle wall; nylon scraper blades wipe every inch.
• Counter-rotating 304 SS beater breaks up solids for consistent product texture.
• Bayonet-mount shafts remove in seconds for cleaning or kettle-only operation.
• Actuator-assisted lift plus positive rim-lock; safety device blocks high-speed starts when raised.
