The Migali C-F40-NG commercial fryer has a frypot with tube burners that are submerged in the oil to maximize heat transfer. Although the tubes can make it difficult to clean the fry tank, they do create a cold zone—an area where sediment can build up without burning in the extremely hot oil. Made of stainless steel, this fryer's tank can hold 40 pounds of oil and comes with two wire mesh baskets. Plastic-coated handles on the baskets do not conduct as much heat as metal, protecting users from burns.
Equipped with a range between 200 and 400 degrees Fahrenheit, the electromechanical thermostat in this Migali C-F40-NG floor-model fryer lets the operator select the temperature. The unit ensures the temperature does not exceed 400 degrees, protecting the fryer parts and adding safety. Its flue deflector directs heat and fumes to the ventilation hood above the unit.
